Sudachi is a very small citrus fruit. It is harvested when it is still unripe and green. Once matured, it turns yellow. Sudachi adds a great flavor to cooked fish and matsutake mushrooms. 

Sudachi is produced mainly in Tokushima Prefecture. Suzuki Farm started farming sudachi about 6 years ago.
