“Tokachi Tawanishi Nagaimo” is a variety of Japanese yam. It is relatively short and shaped like a sake bottle. Its skin and peeled tuber are whiter than the other varieties of nagaimo and tend not to discolorate as much.
Nagaimo can be enjoyed in a variety of cooking. It has a crispy texture if consumed raw. If grated it becomes sticky, while baked nagaimo has a flaky texture.
