Gobo, or burdock root, is a root vegetable. Depending on its length, gobo is divided into “short-rooted” and ”long-rooted” varieties. The short-rooted gobo ranges from 30 to 50 cm while long-rooted gobo ranges from 70 to 100 cm.
Gobo can be cooked in many ways, including simmered, stir-fried, or raw in salad, to enjoy the unique flavor and texture. When you prepare gobo, be sure to use a scrubbing brush or the back of a kitchen knife to lightly scrape off the skin because its skin has the most flavor and umami.
