Kabosu is a citrus fruit which is about the size of a tennis ball. Its juice is rich in sourness and has a unique aroma. Kabosu improves the flavor of sashimi, cooked fish and hot pot. It is also used as a vinegar alternative. 

Kabosu is produced mainly in Oita Prefecture. Suzuki Farm started farming kabosu in the early years.
