Wakegi, or tree onion, is a hybrid of bunching onions and shallots. A cluster of bulblets grow on the original stalk in place of flowers, which look like shallots. Unlike typical green onions, wakegi has slightly inflated roots with a mild flavor and an aroma with a hint of sweetness.
When we thin out Tokyo negi at Suzuki Farm, we set aside the seedlings and grow them as wakegi. It takes time and effort to thin out, but this is a key process to grow perfect Tokyo negi and wakegi.
